Then why is it that other viruses (the cause of chicken pox is virus too) like HSV, HPV or even HIV does not go away by itself with the act of our immune system?

Chicken pox is a herpes virus, and doesn't go away by itself. It remains inactive in our bodies and can be reactivated later. This is known as shingles.
The reason we cannot fight off HIV is that it attacks the immune system itself. It goes unnoticed for a long time, and by the time the immune system recognizes it, it is too late.

Chickenpox or chicken pox is a highly contagious illness caused by primary infection with varicella zoster virus.
Exposure to VZV in a healthy child initiates the production of host immunoglobulin G (IgG), immunoglobulin M (IgM), and immunoglobulin A (IgA) antibodies; IgG antibodies persist for life and confer immunity. Cell-mediated immune responses are also important in limiting the scope and the duration of primary varicella infection. After primary infection, VZV is hypothesized to spread from mucosal and epidermal lesions to local sensory nerves. VZV then remains latent in the dorsal ganglion cells of the sensory nerves. Reactivation of VZV results in the clinically distinct syndrome of herpes zoster (i.e., shingles), and sometimes Ramsay Hunt syndrome type II.
There are medications for treating chicken pox. Acyclovir is an anti-virual medication that can be used. Typically it goes away on its own and is not needed. Anti-viruals are mostly used in more severe cases.

The virus that causes chicken pox (herpes simplex virus 3, aka Varicella zoster virus) never actually gets out of our system or goes away. It just becomes dormant in our bodies just like all the other herpes simplex viruses do (there are 8 different herpes viruses).
The virus that causes chicken pox can actually "flare up" again as adults. This is called shingles.
Viruses usually never go away. They just become dormant in the body, or don't show signs or symptoms until years and years later. There are treatments for viruses but there are no cures. The best thing people can do is to prevent getting a virus in the first place with vaccines.
