Instead of coating the chicken with eggs or milk before the breading try this.

Crush the corn pops. Add herbs such as tarragon, basil, or parsley. If you dont have these on hand, dont worry. I would use dried herbs. Also mix in a little salt, pepper, and parmesean cheese.

Take the chicken breasts. I usually use a mixture of eggs and milk before I bread. I have an addition for your recipie.

For four breasts, use 2 eggs, 1 cup of milk/1/2 and 1/2, and 3 tbs. of honey. Mix with a wisk.

Coat the chicken with the liquid mixture. Then dip and completely cover it in the corn pop breading. You can actually bake this instead of frying (however, if you are in to frying, fry away:)) cook on 350 for 30 minutes.

I believe that this would also be a great coating for Orange Roughy or shrimp.

The honey will really make a subtle, sweet difference. The chicken will pick up this flavor. The corn pops will add a distinct texture; adding the cheese will make it richer.

Hope this helps
